Below is the ingredients for about 2 lb of meat.
Meat Choice: Top side/London Broil – lean meat
2.5 cups of water
2-3 tablespoons of salt
2/3 table spoon of sugar
10 seeds of whole black peppercorn
1/3 teaspoon thyme powder
1 bay leaf
1 clove of garlic
3 ginger slices
2 stalks of celery
3 stalks of parsley
1 table spoon of liquid smoke
- Slice meat into thin slices (1/8-1/4 inch)
- Throw all of the marinade ingredients in a pot and let it boil for about 5 minutes. Then turn off heat and cool down.
- Put meat into marinade and let is marinate overnight in refrigerator
- Dehydrate the meat using dehydrator or oven*
*Preheat oven to 175 then drape meat onto baking racks on baking sheets. This method can take 2-3 hours (or more) depending on how thick the meat is cut.
