HR professional Mickie Okamoto has been making beef jerky for her family since high school. Here's how she does it:

 

Below is the ingredients for about 2 lb of meat. 

Meat Choice: Top side/London Broil – lean meat

Marinade:

2.5 cups of water

2-3 tablespoons of salt

2/3 table spoon of sugar

10 seeds of whole black peppercorn

1/3 teaspoon thyme powder

1 bay leaf

1 clove of garlic

3 ginger slices

2 carrots

¼ onion

2 stalks of celery

3 stalks of parsley

1 table spoon of liquid smoke

  1. Slice meat into thin slices (1/8-1/4 inch)  
  2. Throw all of the marinade ingredients in a pot and let it boil for about 5 minutes.  Then turn off heat and cool down. 
  3. Put meat into marinade and let is marinate overnight in refrigerator
  4. Dehydrate the meat using dehydrator or oven*

*Preheat oven to 175 then drape meat onto baking racks on baking sheets.  This method can take 2-3 hours (or more) depending on how thick the meat is cut.
